Toddy, Biscotti, Bobbotti.

I wanted a healthy biscotti recipe so I decided to make one up!

Toddy (Coffee) - Cold Brewed Coffee.
Biscotti (Cookie) - Twice baked, traditionally Italian cookie.
Bobbotti (?) - You guys know I love to make interesting blog titles.

I have found that I spend a lot of time reading research papers, climbing and going to class, but I still manage to have a few extra hours here or there to waste, so what better way to bide time than to cook and bake?

Well, besides baklava, biscotti of nearly any variety is my favorite dessert. It is a twice baked cookie with no butter. It goes fantastic with such things as dessert wine, coffee, tea or well umm, anything.

This recipe yields about 17 2″ by 3/4″ cookies. You will likely eat 3-4 in one serving, I know I have to stop myself. I calculated it to have approximately 33-40 calories per cookie, but of course this varies depending on the exact ingredients that you choose.

Recipe:
1/2 Cup Buckwheat Flour (or 1/2 Cup of any whole grain wheat flour; pour that bleached stuff in the trashcan!)
1/4 Cup Wheat Germ (high in protein, fiber, vitamins etc.)
1/3 Cup Cashews or Almonds (Good fat, protein, etc.)
1/3 Tsp Salt
1/3 Tsp Baking Powder
1/3 Tsp Baking Soda
1/3 Tsp Vanilla Extract (for deliciousness)
1/3 Cup* Xylitol/Brown Sugar/Splenda (Brown Sugar has a lower glycemic index than white sugar)
1 Egg + 1 Tbs Egg White (I use eggs enriched with Omega-3 fat, but feel free to substitute all of it for egg whites)

*As presented these are only semi-sweet, if you have a major sugar tooth, add just a little more, but don’t overdo it!

Preheat oven to 325F. Chop nuts into pieces, halves work just fine. Combine all dry ingredients, then stir in eggs and vanilla extract and beat until a very thick dough forms. On a floured surface roll into a log shape about 12″ - 13″ long and 2″ thick. Place on greased cookie sheet and bake for 20-25 minutes. After cooking, remove from the oven and let the log cool for about 5 minutes. After time has elapsed, chop diagonally and place back in the oven for another 10-15 minutes. Remove, cool, and enjoy.
